Corned Beef Cabbage And Potatoes Oven Slowed Cooked Recipe

This is slow cooked in the oven for 8-9 hours. I'm not a big fan of Corned Beef & Cabbage but I really like this. My husband got this oven slow cooked recipe from a guy at his work. And he says this is the only way he cooks it. I must agree, the ... More

Ingredients
  • 1 3lb Corned Beef with seasoning packet and reserve juice
  • 1/4 C water
  • Foil
  • 1/2 head cabbage
  • 12 baby red potatoes
  • 1 C beef broth
  • Beer (for drinking) Optional

Directions
  1. Place of a large piece of foil in the center of a large deep sided casserole dish. Place the corned beef in the middle of foil.
  2. Sprinkle season packet over beef along with the reserved juices and the water.
  3. Wrap it tight and wrap again with another piece of foil to keep the steam in.
  4. Bake over night in a 225 degree oven for 8-9 hours. (In our case 10pm to 7am) Can of course be done during the day.
  5. Remove from oven and let rest until cool enough to put in fridge. (about an hour) This helps firm it to slice easily.
  6. Save any juices and slice beef across the grain with an electric knife.
  7. Potatoes & Cabbage:
  8. Wash and place in a microwave safe bowl along with the beef broth.
  9. Cook on high for 12 minutes or until tender.
  10. Add the cabbage to the potatoes and microwave an additional 4 minutes.
  11. In a casserole dish arrange the beef in the middle and place the potatoes and cabbage around it.
  12. Pour the beef broth from the potatoes and reserved juices over the meat and vegetables.
  13. Cover with foil and return to 300 degree oven for about an hour.
  14. **Serve with a beer or two and enjoy:o)
