I'm not usually a big fan of cookies, but these are truely amazing. I have to hide them from my fiancee or they go in a flash! Best eaten straight from the oven:)

Ingredients
  • 250g butter, softened
  • 1 teaspoon vanilla extract
  • 3/4 cup (165g) sugar
  • 3/4 cup (165g) firmly packed brown sugar
  • 1 egg
  • 2 1/4 cups (335g) plain flour
  • 1 teaspoon bicarbonate of soda
  • 2 cups (300g) chocolate melts of your choice, chopped coarsely if they are the larger ones

Directions
  1. Beat butter, extract, sugars and egg in a small bowl with an electric mixer until light and fluffy. Transfer to a large bowl.
  2. Stir in combined sifted flour and soda, in two batches, into wet mixture. Stir in the chocolate. (If you would like to make several different batches with different types of chocolate, split the mixture equally into however many parts are needed and then add your chocolate) Cover with cling film and refrigerate for 1 hour.
  3. Preheat oven to moderate while cookie dough is in the fridge.
  4. Roll level teaspoons of the dough into balls; place on greased oven trays 4cm apart. Bake, uncovered, in amoderate oven for about 12 minutes. Cool cookies on trays.
