Lentil Burgers

- 1 cup (250g / 8oz) red lentils shopping list
- 1 tablespoon olive oil shopping list
- 2 onions, sliced shopping list
- 1 teaspoon ground cumin shopping list
- 1 teaspoon ground coriander shopping list
- 1 teaspoon garam masala shopping list
- 425g (14oz) can chickpeas, drained shopping list
- 1 egg shopping list
- 1/4 cup (15g / 1/2 oz) chopped fresh parsley shopping list
- 2 tablespoons fresh coriander shopping list
- 2 1/4 cups stale breadcrumbs shopping list
- plain flour, for dusting shopping list
How to make it
- Add lentils to a large pan of boiling water and simmer for 8 minutes, or until tender. Drain well.
- Heat the oil in a pan and cook the onion for 3 minutes or until soft. Add the ground spices and stir until fragrant. Cool the mixture slightly.
- Place the chickpeas, egg, onion mixture and half the lentils in a food processor. Process for 20 seconds, or until smooth. Transfer to a bowl.
- Stir in the remaining lentils, parsley, coriander and breadcrumbs. Mix well, and divide into 10 portions.
- Shape the portions into round paties (if the mixture is too soft, chill for 15 minutes or until firm). Toss the patties in flour, shaking off the excess.
- Place patties on a lightly greased hot BBQ, grill or hotplate. Cook for 3-4 minutes each side or until browned.
- STORAGE: these patties can be made up to 2 days in advance and stored, covered in the fridge.
- *You could also use green lentils for this recipe, but they will take approx 30 minutes to cook.
