Ingredients
  • 1/4 lb. butter
  • 3/4 cup cold white potato, mashed well
  • 2 lbs. confection sugar
  • 2 teaspoons vanilla
  • 1/2 lb flaked coconut

Directions
  1. In double boiler, melt butter.
  2. Then add rest of ingredients in order.
  3. Have a cookie sheet (lined with parchment paper) and, working quickly because it dries out fast, place mix on 1/2 (one end) of the sheet to 1/2" thick. Trust me it will be easier to get out!
  4. When hard, cut into whatever size squares you like.
  5. In another double boiler melt:
  6. 12 oz. semi-sweet chocolate chips
  7. 4 oz. unsweetened chocolate
  8. 1/2 cake of parafin wax
  9. Coat coconut squares with chocolate mixture and harden on wax paper.
  10. *****I have doubled,tripled, even quadrupled this recipe for gifts and it turns out perfect every time. Just be sure you only put it on one end of a cookie sheet!
