Halloumi Skewers With Courgette And Mushrooms Recipe

Ingredients
  • 750 g halloumi cheese
  • 500 g baby courgettes
  • 40 small chestnut mushrooms
  • 20 bay leaves
  • 20 small skewers (soaked in water if wooden)
  • MARINADE:
  • 4 tbsp Japanese soy
  • 2 tbsp honey mustard
  • 3 garlic cloves, crushed
  • 100 ml chopped parsley
  • 4 tbsp olive oil

Directions
  1. Cut the halloumi into 40 cubes and slice the courgette into 40 slices.
  2. Mix the marinade together and add mushrooms and courgette. Let marinade at least 1 hour.
  3. Thread the skewers with cheese, bay leaves, mushrooms and courgettes. Grill on medium, 4-5 min per side.
