Halloumi skewers with courgette and mushrooms

- 750 g halloumi cheese shopping list
- 500 g baby courgettes shopping list
- 40 small chestnut mushrooms shopping list
- 20 bay leaves shopping list
- 20 small skewers (soaked in water if wooden) shopping list
- MARINADE: shopping list
- 4 tbsp Japanese soy shopping list
- 2 tbsp honey mustard shopping list
- 3 garlic cloves, crushed shopping list
- 100 ml chopped parsley shopping list
- 4 tbsp olive oil shopping list
How to make it
- Cut the halloumi into 40 cubes and slice the courgette into 40 slices.
- Mix the marinade together and add mushrooms and courgette. Let marinade at least 1 hour.
- Thread the skewers with cheese, bay leaves, mushrooms and courgettes. Grill on medium, 4-5 min per side.
