Tantalizing Hot And Spicy Cheeseball Recipe
Another tried and true delight from one of the estate sale collections I obtained a few years back. Who doesn't love cheese balls? This one is unique in that it is not only creamy and cheesy but a little on the spicy side which I love.

Ingredients
  • 2 teaspoons jalapeno relish chopped
  • 8 ounces cream cheese softened
  • 1/2 cup sharp cheddar cheese
  • 1/2 cup chopped pecans
  • Jalapeno Relish:
  • 1-1/2 cups granulated sugar
  • 1-1/3 cups apple cider vinegar
  • 1/3 pound yellow onions
  • 1/4 cup carrots
  • 1 teaspoon dill seeds
  • 1 teaspoon mustard seeds

Directions
  1. Mix relish, cheddar cheese and cream cheese together until well combined.
  2. Chill at least 1 hour.
  3. Place on plastic wrap and form into a ball then roll in chopped pecans and serve with crackers or chips.
  4. To make relish combine vinegar and sugar in large saucepan and mix until all of the sugar is dissolved.
  5. Slice jalapenos, onions and carrots into thin strips.
  6. Add jalapenos, onions and carrots to the saucepan with the dissolved sugar and bring to a boil.
  7. Add mustard and dill seeds and simmer 20 minutes.
  8. Let relish cool.

I've been told today is national cheeseball day, so if I was not traveling for business this week, I definitely check this one out to mark the occasion.
