caribbean jerk pork

- 2 lbs. pork (boston butt, picnic) diced shopping list
- 2-3 tbs. jerk marinade per lb. pork (marinade recipe to follow). shopping list
- jerk marinade (standard) shopping list
- 3/4lb. scotch bonnets, chopped, no stems shopping list
- 1/2 cup minced ginger (fresh) shopping list
- 6oz. ground allspice (fresh) shopping list
- 1/2 lb. thyme, remove leaves shopping list
- 3,4 bunches of scallions shopping list
- 6 cloves minced garlic shopping list
- salt and coarse ground black pepper shopping list
- 1/2 cup olive oil shopping list
- 1 cup soy sauce shopping list
- mix all ingredients except soy sauce and olive oil in food processer. shopping list
- add soy sauce and olive oil with mixed ingredients to bowl. mix well, cover. can be stored in refrigerator up to one week. shopping list
How to make it
- thoroughly massage marinade into pork.
- refrigerate for 2 hours to 2 days.
- bake covered in preheated 350 degree oven covered for 1st hour.
- uncover and continue to bake untill pork browns (approx.
- 45 min. - 1hour)
- turn oven temp down to 200, cover and cook for last hour.
- yields 8 servings.
