Caribbean Jerk Pork Recipe
An island favorite, perfect with peas and rice, red beans and rice, steamed veggies and fried plantains.

Ingredients
  • 2 lbs. pork (boston butt, picnic) diced
  • 2-3 tbs. jerk marinade per lb. pork (marinade recipe to follow).
  • jerk marinade (standard)
  • 3/4lb. scotch bonnets, chopped, no stems
  • 1/2 cup minced ginger (fresh)
  • 6oz. ground allspice (fresh)
  • 1/2 lb. thyme, remove leaves
  • 3,4 bunches of scallions
  • 6 cloves minced garlic
  • salt and coarse ground black pepper
  • 1/2 cup olive oil
  • 1 cup soy sauce
  • mix all ingredients except soy sauce and olive oil in food processer.
  • add soy sauce and olive oil with mixed ingredients to bowl. mix well, cover. can be stored in refrigerator up to one week.

Directions
  1. thoroughly massage marinade into pork.
  2. refrigerate for 2 hours to 2 days.
  3. bake covered in preheated 350 degree oven covered for 1st hour.
  4. uncover and continue to bake untill pork browns (approx.
  5. 45 min. - 1hour)
  6. turn oven temp down to 200, cover and cook for last hour.
  7. yields 8 servings.
