Grilled Greek Lamb Recipe
This makes a quick and easy fuss-free dinner. Serve with a green salad or potato bake and a good bottle of wine.

Ingredients
  • 8 lamb chops
  • 375ml (1½ cups) ready-made Italian tomato sauce
  • 450g baby spinach
  • 200g halloumi cheese, sliced
  • Sea salt and freshly ground black pepper, to season
  • Juice of 1 lemon

Directions
  1. Preheat the grill.
  2. Place the chops in a baking dish and toss in the tomato sauce.
  3. Grill for 6 minutes or until cooked to your liking.
  4. Toss in the spinach.
  5. Place the cheese on top.
  6. Season and add a squeeze of lemon juice.
  7. If you like, make this a one-pot dish. Pour the tomato sauce into a casserole dish and top with the spinach, cheese and lamb chops. Bake until the lamb is cooked.
