Ingredients
  • 2 tblspns cracked pepper
  • 150g gluten free plain flour or 'real' cornflour
  • Oil for deep frying
  • 500g squid tubes
  • salt and pepper to taste
  • 4 tblspns sweet chilli sauce
  • 1 continental (Lebanese) cucumber, skinned, deseeded and sliced into ribbons

Directions
  1. Combine pepper and flour in a bowl and put to one side
  2. Heat oil in deep fryer
  3. Cut a vertical line down each squid tube and open it out flat on a board removing the cartilage
  4. Score the flesh diagonally in a criss cross pattern
  5. Be careful not to cut all the way through
  6. Cut the squid into approximately 3cm x 3cm pieces
  7. Coat with the flour mix
  8. Deep fry squid pieces in hot oil for 2 to 3 mimnutes
  9. Remove from oil and drain
  10. Season with salt and pepper
  11. Place squid on a bed of cucumber ribbons with the sweet chilli sauce drizzled around
