How to make it

  • Combine pepper and flour in a bowl and put to one side
  • Heat oil in deep fryer
  • Cut a vertical line down each squid tube and open it out flat on a board removing the cartilage
  • Score the flesh diagonally in a criss cross pattern
  • Be careful not to cut all the way through
  • Cut the squid into approximately 3cm x 3cm pieces
  • Coat with the flour mix
  • Deep fry squid pieces in hot oil for 2 to 3 mimnutes
  • Remove from oil and drain
  • Season with salt and pepper
  • Place squid on a bed of cucumber ribbons with the sweet chilli sauce drizzled around
