Salt And Pepper Squid With Sweet Chilli Sauce - Gluten Free

- 2 tblspns cracked pepper shopping list
- 150g gluten free plain flour or 'real' cornflour shopping list
- oil for deep frying shopping list
- 500g squid tubes shopping list
- salt and pepper to taste shopping list
- 4 tblspns sweet chilli sauce shopping list
- 1 continental (Lebanese) cucumber, skinned, deseeded and sliced into ribbons shopping list
How to make it
- Combine pepper and flour in a bowl and put to one side
- Heat oil in deep fryer
- Cut a vertical line down each squid tube and open it out flat on a board removing the cartilage
- Score the flesh diagonally in a criss cross pattern
- Be careful not to cut all the way through
- Cut the squid into approximately 3cm x 3cm pieces
- Coat with the flour mix
- Deep fry squid pieces in hot oil for 2 to 3 mimnutes
- Remove from oil and drain
- Season with salt and pepper
- Place squid on a bed of cucumber ribbons with the sweet chilli sauce drizzled around
