Scrumptious Eggless Waffles Recipe
When my son was diagnosed with an egg allegy, we had a dilemma since he LOVES waffles! I found this recipe and we can't tell the difference. Delicious eggless waffles...low in fat, high in fibre, what more could you want?!

Ingredients
  • 1/3 C oats
  • 1/3 C bran
  • 1 C whole wheat flour (may need to add a bit more)
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 Tbsp corn syrup
  • 2 Tbsp applesauce
  • 1 C buttermilk (or you can make your own low fat version by adding 1 Tbsp lemon juice to 1 c skim milk)
  • 2 Tbsp melted butter

Directions
  1. Mix all ingredients together. Let stand 5 minutes.
  2. Pour 1/2 C of mixture into already warmed waffle iron (mixture will be sticky and thick- spread out evenly)
  3. Cook waffles for approx. 3 minutes per waffle.
  4. Serve warm, topped with vanilla yogurt and berries!
