A variation on the familiar "rum balls".

Ingredients
  • 1 c finely crushed vanilla wafers
  • 1 c powdered sugar
  • 1 c chopped almonds, toasted
  • 2 T cocoa
  • 2 T butter
  • 1/4 c seedless raspberry jam
  • 1/4 c raspberry liqueur
  • 6 oz sweet baking chocolate, grated

Directions
  1. Combine wafer crumbs, sugar, almonds and cocoa in mixing bowl.
  2. Heat butter and raspberry jam until butter melts.
  3. Blend butter mixture into crumb mixture; add raspberry liqueur.
  4. Chill about 1 hour, then shape into 1 inch balls. Roll balls in grated chocolate.
  5. Makes approx 20 pieces
  6. May be stored in an airtight container for up to 2 weeks.
