Whitefish In Coconut Milk Recipe
I absolutely love fresh fish "cooked" with lime juice! It's so very refreshing.

Ingredients
  • 1 pound of the freshest fish you can find, skinned, filleted, and cut into 1/2" cubes. (Cod, snapper, or halibut all work well with this)
  • 1 t salt
  • Juice of 2 limes
  • 1-2 cloves garlic, peeled and crushed
  • 3 green onions, chopped
  • 1 cup coconut milk
  • 1/2 small onion, peeled and chopped.
  • 1/4 - 1/2 cup toasted sesame seeds or chopped cashews

Directions
  1. Place the fish in a non-reactive bowl. Toss in the salt and lime juice. Marinate in the refrigerator for about 4 hours. Remove the fish, drain well. Add the remaining ingredients except the sesame seeds or cashews. Chill thoroughly. Garnish with the sesame seeds of cashews.
