Whitefish in Coconut Milk

- 1 pound of the freshest fish you can find, skinned, filleted, and cut into 1/2" cubes. (cod, snapper, or halibut all work well with this) shopping list
- 1 t salt shopping list
- juice of 2 limes shopping list
- 1-2 cloves garlic, peeled and crushed shopping list
- 3 green onions, chopped shopping list
- 1 cup coconut milk shopping list
- 1/2 small onion, peeled and chopped. shopping list
- 1/4 - 1/2 cup toasted sesame seeds or chopped cashews shopping list
How to make it
- Place the fish in a non-reactive bowl. Toss in the salt and lime juice. Marinate in the refrigerator for about 4 hours. Remove the fish, drain well. Add the remaining ingredients except the sesame seeds or cashews. Chill thoroughly. Garnish with the sesame seeds of cashews.
