How to make it

  • In bowl, beat cream cheese, sugar, lemon juice, add coconut
  • Set aside
  • In large mixer bowl, with an electric mixer, combine cake mix, apricot
  • nectar, eggs and softened butter
  • Mix on low for 30 seconds
  • Beat for 2 minutes
  • Spoon cake batter into well greased and floured Bundt cake pan
  • Spoon cream cheese filling into * center * of the batter, making sure the filling doesn't touch the sides of pan
  • Bake at 350 degrees for about 1 hour or until the sides shrink away from the pan
  • Cool for about 10 minutes
  • Turn out onto cake plate or stand
  • Cool for 30 minutes
  • In bowl combine powdered sugar and apricot nectar
  • Drizzle glaze over cake
