Glazed Apricot Cake With Cream Cheese Coconut Filling Recipe

Ingredients
  • 1 box Duncan Hines Butter Cake Mix
  • 3/4 cup apricot nectar
  • 3 eggs
  • 1/2 stick unsalted butter, softened
  • FILLING
  • 2-8 ounce packages cream cheese, softened
  • 1 cup sweetened coconut (Angel Flake)
  • 1/2 cup sugar
  • 2 tablespoons lemon juice
  • GLAZE
  • 2 cups powdered sugar
  • About 2 tablespoons apricot nectar

Directions
  1. In bowl, beat cream cheese, sugar, lemon juice, add coconut
  2. Set aside
  3. In large mixer bowl, with an electric mixer, combine cake mix, apricot
  4. nectar, eggs and softened butter
  5. Mix on low for 30 seconds
  6. Beat for 2 minutes
  7. Spoon cake batter into well greased and floured Bundt cake pan
  8. Spoon cream cheese filling into * center * of the batter, making sure the filling doesn't touch the sides of pan
  9. Bake at 350 degrees for about 1 hour or until the sides shrink away from the pan
  10. Cool for about 10 minutes
  11. Turn out onto cake plate or stand
  12. Cool for 30 minutes
  13. GLAZE
  14. In bowl combine powdered sugar and apricot nectar
  15. Drizzle glaze over cake
