Glazed Apricot Cake With Cream Cheese Coconut Filling

- 1 box Duncan Hines butter cake mix shopping list
- 3/4 cup apricot nectar shopping list
- 3 eggs shopping list
- 1/2 stick unsalted butter, softened shopping list
- FILLING shopping list
- 2-8 ounce packages cream cheese, softened shopping list
- 1 cup sweetened coconut (Angel Flake) shopping list
- 1/2 cup sugar shopping list
- 2 tablespoons lemon juice shopping list
- GLAZE shopping list
- 2 cups powdered sugar shopping list
- About 2 tablespoons apricot nectar shopping list
How to make it
- In bowl, beat cream cheese, sugar, lemon juice, add coconut
- Set aside
- In large mixer bowl, with an electric mixer, combine cake mix, apricot
- nectar, eggs and softened butter
- Mix on low for 30 seconds
- Beat for 2 minutes
- Spoon cake batter into well greased and floured Bundt cake pan
- Spoon cream cheese filling into * center * of the batter, making sure the filling doesn't touch the sides of pan
- Bake at 350 degrees for about 1 hour or until the sides shrink away from the pan
- Cool for about 10 minutes
- Turn out onto cake plate or stand
- Cool for 30 minutes
- GLAZE
- In bowl combine powdered sugar and apricot nectar
- Drizzle glaze over cake
