How to make it

  • Finely chop all the vegetables and put them in a bowl
  • Mix the vegetables with the passata -- enough to bind them together, you don't want it too wet
  • Heat a little oil in a frying pan. Add 1/4 of the vegetables and heat them through
  • Make a well in the middle of the pan and break 1 egg in it
  • When the egg is ready, transfer the vegs to a plate with the egg on top and repeat with the remaining 3 portions
