Ingredients
  • 2 Tablespoons Butter
  • 1 cup cottage cheese ( not lo-fat )
  • 2 cups whole milk
  • 1 teaspoon dry mustard
  • Pinch Cayenne
  • Pinch nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 pound sharp or extra-sharp cheddar cheese, grated (reserve 1/4 cup)
  • 1/2 pound elbow pasta, uncooked.

Directions
  1. Heat oven to 375
  2. Position oven rack in upper third of oven
  3. Use 1 Tablespoon butter to butter 9 inch square or round baking pan
  4. Reserve 1/4 cup grated cheese for topping
  5. In a blender, puree cottage cheese, milk, mustard, cayenne, nutmeg and salt & pepper together
  6. In large bowl combine remaining grated cheese, milk mixture and uncooked pasta
  7. Pour into prepared pan, cover lightly with foil
  8. Bake for 30 minutes
  9. Uncover pan, stir gently, sprinkle with reserved cheese, dot with 1 Tablespoon butter
  10. Bake uncovered for 30 minutes, until browned
  11. Cool 15 minutes before serving
