Ingredients
  • 3 or 4 zuccini sliced in 1/4 in slices lightly steamed
  • 3 yellow squash 1/4 in slices lightly steamed
  • 4 or 5 medium carrots 1/4 in slices steamed until tender
  • 9 boiled lasagna noodles
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 3 c milk (or enough to make bechamel
  • 1 c parmesian
  • 1 c mozerella

Directions
  1. In buttered 13 x 9 pan, layer ingredients as for any lasagna ending wih cheese. Bake at 350 for about 20 minutes covered with foil.. Bake uncovered until golden brown and bubbling. Serve with garlic bread and salad.
