Lobster Cocktail

- 2 tablespoons yellow peppers diced small shopping list
- 1 tablespoon green pepper shopping list
- 2 tablespoons white onion finely chopped shopping list
- 1 jalapeno pepper seeded and finely minced shopping list
- 1 medium tomato seeded drained and diced shopping list
- 1/4 cucumber diced small shopping list
- 1-1/2 tablespoons finely minced mint shopping list
- 3 tablespoons finely minced cilantro shopping list
- 2 key limes juiced shopping list
- 3 tablespoons fresh orange juice shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 pound main lobster cooked rare and coarsely chopped shopping list
- 1 medium avocado diced into cubes shopping list
How to make it
- Make a salsa by combining yellow and green peppers, onion, jalapeno, tomato, cucumber, mint, cilantro, olive oil, juice of 1 lime and half of the orange juice.
- Season with salt and pepper.
- Marinate lobster meat in remaining lime juice and orange juice for 5 minutes.
- Take a chilled martini glass and put a small amount of salsa in the bottom of the glass.
- Arrange a layer of lobster meat on top and add a layer of the diced avocado.
- Repeat process until glass is almost full.
- End with a layer of lobster on top then top with a small teaspoon of salsa and avocado.
