Bring Mardi Gras to your kitchen!! This wonderful cabbage and rice salad is a perfect compliment to your favorite chicken or fish dish!! Add a few slices of bread hot from the oven and you will be good to go!! Enjoy!

Ingredients
  • 1-1/2 Cup - Cooked Rice, Room Temperature
  • 1 Cup - Shredded Red Cabbage
  • 1 Cup - Shredded Green Cabbage
  • 1/2 Cup - Grated Carrots
  • 1/2 Cup - Green Bell Pepper, Diced
  • 1/4 Cup - Mayonnaise (Reduced Fat works fine!!!)
  • 3 Tablespoons - Sour Cream
  • 2 Teaspoons - Vinegar
  • 2 Teaspoons -Sugar
  • 1/2 Teaspoon - Celery Seed
  • 1/4 Teaspoon - Salt
  • 1/4 Teaspoon - Ground White Pepper

Directions
  1. Combine rice, red cabbage, green cabbage, carrots and pepper in large bowl.
  2. Blend mayonnaise, sour cream, vinegar, sugar, celery seed, salt, and white pepper in small bowl.
  3. Pour over rice mixture and toss lightly.
  4. Makes 4 Servings.
  5. *****This recipe can easily be doubled!!!*****
