Ingredients
  • 500g Small fresh or canned okra(can be frozen)cut to half
  • 2 fresh tomatoes cut very small
  • 1 Tbs tomatoe paste
  • 2 galic bulbs cut very small
  • 1/4 cup freh corriander cut very small
  • !/4 cup olive oil
  • 2 Tbs lemon
  • 1/2 cup water

Directions
  1. When using the fresh okra cut off the stems
  2. wash and dry the okra on a towel
  3. Fry the garlic
  4. Add the okra and slowly stir fry it
  5. Add 1 Tsp lemon(so the ocra will not become dark and sticky)
  6. Add the fresh tomatoes
  7. Add the tomatoe paste
  8. Add the lemon juice
  9. Pour half a cup of water over the okra and allow boiling over slow heat for half an hour without stiring
  10. leave till the okra becomes tender.
  11. Add the fresh coriander boil for few minutes
  12. Leave to cool and serve garnished with slices of green peper and lemon rinds.
