This dressing is a wonderful dressing for German Potato Salad or Wilted Spinach Salad.

Ingredients
  • 5-6 Slices of Bacon
  • ½ cup of Sugar
  • ½ Teaspoon Salt
  • 1 Tablespoon Cornstarch (or 2 tablespoons flour)
  • 1 Egg beaten
  • ¼ cup Vinegar
  • 1 cup water

Directions
  1. Cut bacon into small pieces and fry till crisp~reserve drippings.
  2. Combine sugar salt and cornstarch; add egg, water and vinegar; whisk well.
  3. Pour mixture into hot bacon drippings. Cook till consistency of medium gravy.
  4. Use for German Potato Salad dressing or Wilted Spinach Salad.

This is pretty much the exact recipe I use and it is delicious. You can add a little more sugar or vinegar at the end to suit your tastes.
