How to make it

  • Preheat oven to 350F/180C/Gas Mark 5
  • Butter a deep oven casserole dish (you have a dish make sure it's with a tight fitting lid) and line the bottom with potato slices. Season with salt and pepper.
  • Arrange half the chops or beef, and kidneys (if used), and cover with a layer of onions.
  • Cover with more potatoes.
  • Repeat the steps until you have used all the meat , onions and potatoes, finishing with the potatoes.
  • Pour in the stock, herbs and rosemary.
  • Cover with a buttered piece of baking parchment and put on a tightly fitting lid.
  • Bake for 2 hours, then remove the lid and paper.
  • Dot with more butter and bake for another 30 minutes.
  • Serve with red pickled cabbage and crusty bread rolls.
