Manx Version Lancashire Hotpot

                    - 8 lamb chops or 2 lbs cubed beef (stewing beef is good) shopping list
- 4 lamb kidneys, halved and cored (Optional) shopping list
- 2 lalrge onions, peeled and sliced shopping list
- 2 cups lamb or beef stock shopping list
- 1tsp dried mixed herbs shopping list
- 1tsp dried rosemary shopping list
- 1 1/2 lbs white potatoes,thinly sliced shopping list
- 4Tbsp butter shopping list
- salt and pepper shopping list
How to make it 
                    - Preheat oven to 350F/180C/Gas Mark 5
- Butter a deep oven casserole dish (you have a dish make sure it's with a tight fitting lid) and line the bottom with potato slices. Season with salt and pepper.
- Arrange half the chops or beef, and kidneys (if used), and cover with a layer of onions.
- Cover with more potatoes.
- Repeat the steps until you have used all the meat , onions and potatoes, finishing with the potatoes.
- Pour in the stock, herbs and rosemary.
- Cover with a buttered piece of baking parchment and put on a tightly fitting lid.
- Bake for 2 hours, then remove the lid and paper.
- Dot with more butter and bake for another 30 minutes.
- Serve with red pickled cabbage and crusty bread rolls.
