Sweet Yam Bread Pudding Recipe
This pudding puts a little Cajun Creole spice into the mix for a sweet veggie pudding dessert delight.

Ingredients
  • 3 Eggs slightly beaten
  • 1 cup Milk
  • 1/3 cup Brown Sugar
  • 1/2 tsp Pumpkin Spice Mix
  • 1 tsp Vanilla
  • 1 cup Yams, mashed
  • 3 1/2 cups Bread Cubes
  • 1/3 cup Raisins
  • 1/3 cup Walnuts, chopped
  • Whipped Cream (optional)

Directions
  1. Preheat oven to 325 degrees F
  2. Combine eggs, milk, brown sugar, pumpkin pie spice and vanilla into a large bowl.
  3. Stir in yams.
  4. In 8x8x2-inch greased or non-stick baking dish, layer bread crumbs, raisins, and walnuts.
  5. Pour egg mixture over top.
  6. Press lightly to moisten all bread.
  7. Bake 30 to 35 minutes or until a knife inserted in the center comes out clean when removed.
  8. Serve warm or let cool and top with whipped cream if desired.
