Chicken and Apple Casserole

- 2 tablespoons olive oil shopping list
- 3-1/2 pounds broiling chicken quartered shopping list
- 3 pounds mixed root vegetables peeled and cut up shopping list
- 2 medium onions peeled and cut in wedges shopping list
- 2 small cooking apples peeled cored and thickly sliced shopping list
- 2/3 cup dried green lentils shopping list
- 1 cup apple juice shopping list
- 1-1/4 cups chicken broth shopping list
How to make it
- Preheat oven to 375.
- Select at least a 6 quart ovenproof pot large enough in diameter to hold chicken in a single layer.
- Heat oil in pot over medium heat then brown chicken in hot oil for 20 minutes.
- Turn over to brown both sides then drain on paper towels.
- Add root vegetables and onion to hot oil in same pot then sauté 5 minutes.
- Add apples, lentils, apple juice and chicken broth then mix well to cover lentils with liquid.
- Bring to a boil then season to taste with salt and pepper.
- Add chicken skin side up then cover and bake at 375 for 1 hour.
