One of my favourite things for breakfast! The soft creamyness of the avocado & cheese are contrasted by the crisp saltyness of the bacon. Mmmmm...

Ingredients
  • 1 egg, beaten
  • 1 T cream
  • 1 slice cooked bacon (I like thick cut)
  • 1/4 small avocado, sliced
  • 2 slices Jarlsberg cheese (or swiss)
  • Pepper

Directions
  1. Mix cream & pepper (if desired) into egg
  2. Pour egg mixture into small pan over low heat
  3. Arrange bacon, avocado & cheese on one side of omelette
  4. When egg is cooked around edges, and starting to set in the middle, fold egg over to close
  5. Cook for an additional minute and serve!
