Thirty Minute Beef Fajitas Recipe

Ingredients
  • 1 tablespoon vegetable oil
  • 1 white onion cut in strips
  • 2 garlic cloves minced
  • 1 tablespoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound lean ground beef
  • 1/2 cup salsa
  • 1 sweet red pepper chopped
  • 1 sweet green pepper chopped
  • 1 small zucchini thinly sliced
  • 4 flour tortillas
  • 2/3 cup sour cream
  • 2 teaspoons Dijon mustard

Directions
  1. In nonstick skillet heat oil over medium high heat.
  2. Cook onion, garlic, chili powder, salt and pepper stirring often for 5 minutes.
  3. Add beef and salsa then cook breaking up beef with back of spoon for 3 minutes.
  4. Add peppers and zucchini then cook stirring 3 minutes or until liquid has evaporated.
  5. Meanwhile wrap tortillas in foil and heat at 350 for 5 minutes.
  6. Stir sour cream with mustard then divide beef mixture among tortillas and roll up.
  7. Serve with sour cream mixture.
