Caldo Verde is a Portuguese national dish.It is served in any occasion, including festives ones, like Christmas. My family simply loves it.

Ingredients
  • 3-4 tblsp of olive oil
  • 1 large onion
  • 2 cloves garlic, thinly sliced
  • 250 grm chouriço, diced (portuguese pork sausage, seasoned with paprika paste and garlic)
  • 6 medium potatoes, peeled
  • 500grms collard greens, cut into very fine julienne
  • Salt and pepper to taste

Directions
  1. Boil the peeled potatoes and onion together until well cooked.
  2. Purée the potatoes and onion with a handheld blender . Bring back to the heat, once the broth starts to boil, add garlic slices and chouriço for 10 minutes.
  3. Add the julienned collard greens and finish cooking without covering.
  4. Serve hot and accompanied by broa, Portuguese cormeal bread.
