Caldo Verde - Portuguese Green Soup

- 3-4 tblsp of olive oil shopping list
- 1 large onion shopping list
- 2 cloves garlic, thinly sliced shopping list
- 250 grm chouriço, diced (portuguese pork sausage, seasoned with paprika paste and garlic) shopping list
- 6 medium potatoes, peeled shopping list
- 500grms collard greens, cut into very fine julienne shopping list
- salt and pepper to taste shopping list
How to make it
- Boil the peeled potatoes and onion together until well cooked.
- Purée the potatoes and onion with a handheld blender . Bring back to the heat, once the broth starts to boil, add garlic slices and chouriço for 10 minutes.
- Add the julienned collard greens and finish cooking without covering.
- Serve hot and accompanied by broa, Portuguese cormeal bread.
