How to make it

  • Whip together the cream and powdered sugar till soft peaks are formed.
  • Fold the strawberry jam into the cream.
  • Place the cookies in a large sealable bag and smash any way you like.
  • Use flat-bottemed bowls, such as ramekins.
  • Place a small layer of cookies in the bottom of each ramekin, then put a layer of the cream, followed by a middle layer of cookies, and finally topped with cream once more.
  • Total: 2 layers of cookies and 2 layers of cream.
  • make sure the cream on top is smoothed flat.
  • Place in the freezer for an hour (I like to make this before we eat dinner, so that its ready when we're done.)
  • Use a knife to gently remove it from the sides of the bowl, invert onto a plate.
  • Garnish with chocolate syrup and fresh mint.
