Jalapeno Halibut Olympia Recipe
A fabulous way to fix halibut. It's herby, spice and so moist. Will impress anybody you serve it to. I love halibut and this one is right at the top of my favorites. Hope you enjoy as much as we do.

Ingredients
  • 2 halibut filets
  • 1/2 green or red bell pepper or mix
  • 1/4 white onion and 3 stalks of green onion
  • 1/2 cup white wine
  • Juice of 1 lemon
  • Juice of 1 lime
  • 3 teaspoons butter
  • 8 ounces mayonnaise
  • 1 bunch of cilantro stems removed
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 2 jalapeno peppers
  • 1/4 teaspoon granulated garlic
  • 1 cup Japanese bread crumbs

Directions
  1. Dice bell pepper and put on bottom of baking dish.
  2. Place halibut filets on top of peppers.
  3. Mix white wine, lemon juice, lime juice and butter together and pour over halibut and peppers.
  4. In a food processor combine mayonnaise, cilantro, cumin, oregano, garlic and jalapeno and blend until well mixed.
  5. Add bread crumbs to mix and spread over the top of the halibut.
  6. Bake at 350 for 15 minutes.
