Large Batch Oriental Halibut Salad Recipe
This salad takes a little effort to make but it is well worth it. It has so many unique flavors and herbs all combined in one beautiful dish. This recipe can easily be halved. Enjoy

Ingredients
  • 2 pounds halibut
  • Peanut Sauce Salad Dressing:
  • 1 cup creamy peanut butter
  • 2 cups Oriental sweet red pepper sauce
  • 1/3 cup soy sauce
  • 2 teaspoons fresh garlic minced
  • 1/2 cup rice wine vinegar
  • Juice from 4 fresh limes
  • Juice from 2 fresh lemons
  • 1/3 cup sesame oil
  • 1/4 cup sesame oil
  • 1 medium sweet onion diced
  • 1 teaspoon red pepper flakes
  • Salad:
  • 5 heads romaine lettuce chopped
  • 3 bunches green onions sliced thin
  • 4 fresh jalapeno peppers seeded and sliced thin
  • 2 carrots peeled and grated
  • 1 package broccoli slaw
  • 2 cups thinly sliced cabbage
  • 2 bunches fresh cilantro chopped
  • 1 cup bean sprouts
  • 1 cucumber sliced thin lengthwise
  • 1 cup crab meat
  • 3 cups medium cooked peeled shrimp

Directions
  1. Bake halibut at 350 for 15 minutes.
  2. Remove skin, bones and fat from the halibut.
  3. Break into small pieces and set aside.
  4. Fry the onion until golden brown in the sesame oil for about five minutes.
  5. Add red pepper sauce, peanut butter, soy sauce and garlic to the onion and boil on medium for 10 minutes.
  6. Add vinegar, lime juice, lemon juice and pepper flakes then add sesame oil and boil for five more minutes.
  7. Remove from heat and cool.
  8. Wash and drain all salad ingredients then mix them together.
  9. Lightly toss halibut in with the salad and serve topped with the peanut butter salad dressing.
  10. Sprinkle with cashew pieces.
