Mommas Easy Veggie Burritos Recipe
One of momma's favorites. This was a way to use up extra veggies yet have a nice spin on burritos.

Ingredients
  • Potato 1
  • squash (any type) 1
  • carrot 1
  • onion 1
  • green or red pepper or pepper of choice 1
  • (any vegetable that can be grated)
  • chedder cheese or pepper jack cheese
  • olive oil
  • Optional: Tomatoes, avocados
  • If wanted, you can add cooked chicken bits or beef.
  • salt and pepper if desired
  • Salsa if desired
  • Flour Tortillas

Directions
  1. Grate the vegtables in desired amounts depending on how many burritos you want to make.
  2. Chop onion and mix with other veggies.
  3. Stir fry the mixed veggies in a small amount of olive oil.
  4. No set coooking time but I do mine for about 4 minutes.
  5. Grate cheese
  6. Spoon the cooked veggies into warmed flour tortillas and top with cheese. Add chopped tomatoes and/or avocados if desired.
  7. Add your own ideas. This is one you can play around with and make it how you like it.
