These muffins are very tasty, versitile, they go great with a meal, as a dessert, easy to take along.

Ingredients
  • 1 cup packed light brown sugar
  • 1/2 cup all purpose flour
  • 1 cup chopped pecans
  • 2/3 cup butter, melted (no substitutes)
  • 2 eggs, beaten

Directions
  1. Grease and flour mini muffin pans, set aside
  2. In large bowl combine sugar, flour and pecan
  3. In seperate bowl beat sugar and eggs until well blended
  4. Add sugar mixture to flour mixture, stir just until moistened
  5. Fill the treated mini pans about 2/3 full
  6. Bake at 350 for 20 minutes or until done
  7. Makes 2-1/2 dozen
