Herb Butter Chicken With Gruyere Cheese And Almonds

- 80g softened butter shopping list
- 1 tbsp finely chopped fresh flat leaf parsley shopping list
- 2 tsp lemon juice shopping list
- 680g skinless chicken breasts (approx. 4 fillets) shopping list
- 360g carrots (approx. 3 medium) shopping list
- 250g baby green beans shopping list
- 35g toasted chopped silvered almonds shopping list
- 30g finely grated gruyere cheese shopping list
How to make it
- Combine butter, parsley and lemon juice in a bowl, cover and chill
- Season chicken and cook on a hot oiled grill plate or BBQ until browned both sides and cooked through. Cover and keep warm
- Peel and slice carrots into 80mm strips (approx. 10mm wide and 5mm thick)
- Wash green beans and top and tail
- Boil, steam or microwave the carrots and beans until tender, drain and season
- Serve chicken on top of the carrots and beans, divide the parsley butter among the chicken breasts, sprinkle with nuts and cheese
