How to make it

  • Combine butter, parsley and lemon juice in a bowl, cover and chill
  • Season chicken and cook on a hot oiled grill plate or BBQ until browned both sides and cooked through. Cover and keep warm
  • Peel and slice carrots into 80mm strips (approx. 10mm wide and 5mm thick)
  • Wash green beans and top and tail
  • Boil, steam or microwave the carrots and beans until tender, drain and season
  • Serve chicken on top of the carrots and beans, divide the parsley butter among the chicken breasts, sprinkle with nuts and cheese

    This recipe is great because it's stolen from The Australian Women's Weekly cookbook "Short-Order" page 46.
    Don't think us Aussie's aren't watching you.
