Herb Butter Chicken With Gruyere Cheese And Almonds Recipe
Yum, chicken and cheese with a herb butter and a few almonds. Served with a side order of fresh vegetables. On the table in less than 40 minutes.

Ingredients
  • 80g softened butter
  • 1 tbsp finely chopped fresh flat leaf parsley
  • 2 tsp lemon juice
  • 680g skinless chicken breasts (approx. 4 fillets)
  • 360g carrots (approx. 3 medium)
  • 250g baby green beans
  • 35g toasted chopped silvered almonds
  • 30g finely grated gruyere cheese

Directions
  1. Combine butter, parsley and lemon juice in a bowl, cover and chill
  2. Season chicken and cook on a hot oiled grill plate or BBQ until browned both sides and cooked through. Cover and keep warm
  3. Peel and slice carrots into 80mm strips (approx. 10mm wide and 5mm thick)
  4. Wash green beans and top and tail
  5. Boil, steam or microwave the carrots and beans until tender, drain and season
  6. Serve chicken on top of the carrots and beans, divide the parsley butter among the chicken breasts, sprinkle with nuts and cheese
