Red Beans

This dish can be as spicy as you like. Goes perfectly with french bread and served over steamed rice. This is a New Orleans favorite served on Monday for lunch or dinner.
Ingredients
- 1lb red kidney beans shopping list
- 1 med yellow onion, chopped shopping list
- 1 med green bell pepper, chopped shopping list
- 2 stalks celery, chopped shopping list
- 3 cloves garlic, chopped shopping list
- 1lb smoked sausage shopping list
- 1lb ham seasoning shopping list
- 3 bay leaves shopping list
- salt and pepper to taste shopping list
- Tony's Chachere creole seasoning to taste shopping list
How to make it
- sort beans, making sure there are no rocks
- soak beans over night with enough water to cover
- drain water
- to crook pot add all ingredients and enough clean water to cover about 1 in. over ingredients
