My mom usually makes these for Thanksgiving.

Ingredients
  • 2 8-ounce packages of cream cheese, softened
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 3/4 cup sugar
  • 2 eggs
  • 20 vanilla wafer cookies
  • 1 21-ounce can cherry pie filling (blueberry is good, too)
  • 20 cupcake paper liners
  • muffin tins

Directions
  1. Preheat over to 350 degrees.
  2. Cream together softened cream cheese, lemon juice, vanilla, sugar, and eggs until smooth.
  3. Put 1 vanilla wafer in each cupcake paper liner in muffin tin.
  4. Fill each cup 3/4 full of batter.
  5. Bake 10-15 minutes or until blade of knife comes out clean.
  6. Cool.
  7. Top each with 3 cherries.
  8. Yum.
