How to make it

  • Mix together to form a stiff dough.
  • Knead 5-10 min. until stiff and elastic.
  • Cover with water and let soak 2 hours (or overnight).
  • Wash starch out of dough by working the dough in water, and changing the water several times until the water is almost clear.
  • Flatten the gluten with hands.
  • Roll tightly into a “log” shape and encase in cheese cloth.
  • Cover with water and boil for one hour.
  • Drain and let cool.
  • Drain and let cool.
  • Makes about 2 lbs. of gluten.
  • You can flavor by adding Lipton Onion Soup mix to the water you boil in. You can also flavor by adding McKays Beef Seasoning, McKays Chicken Seasong or McKays Pork Seasoning. (These are vegetarian meat flavorings available in some health food stores or by ordering online.)
  • This keeps well if covered with liquid and covered in the refridgerator for at least 1 week.

    I have made it several times. Both with a boxed Seitan mix which is just high gluten flour and the way described above. Glad you stopped by. Let me know how you like it JoJo. Cheers!
