Ingredients
  • 2 punnets fresh strawberries raspberries or blueberries
  • 2 Tbsp icing sugar
  • Juice of a small lemon
  • 50g butter
  • 1 small brioche loaf, cut into 6 x 1.5cm slices
  • 50g caster sugar
  • 250ml creme fraiche
  • Extra icing sugar, to dust

Directions
  1. Preheat oven to 200°C. Line an oven tray with baking paper.
  2. Put berries in a large mixing bowl and dust with icing sugar and add the lemon juice. Toss gently and set aside for 15 minutes.
  3. Butter 1 side of the brioche slices and sprinkle with caster sugar. Bake for 6-8 minutes or until the bread is lightly golden and crisp.
  4. Spoon over the crème fraîche.
  5. Top with the berries.
  6. Dust with icing sugar and serve immediately.
