These cookies never get crunchy. But to keep them soft, use corn oil. Veetable oil results in cookies that are dry and get stale quickly.

Ingredients
  • 2 cups sifted flour
  • 1 1/4 cups sugar
  • 1 t. baking powder
  • 1 t. salt
  • 1/2 t. baking soda
  • 1 t. cinnamon
  • 3 cups oats
  • 1 cup raisins or candied fruit
  • 1/2 cup chopped nuts
  • 1/2 cup corn oil
  • 2 eggs
  • 1/2 cup milk

Directions
  1. Preheat oven to 400 degrees
  2. Sift dry ingredients together. Stir in oats, raisins and nuts. Mix well. Add oil, egs and milk, stir thoroughly.
  3. Drop dough by teaspoonsfuls onto cookie sheet. Bake 10 to 12 minutes.
  4. 66 calories; 1 g protein; 10 g carbs; 1 g fiber; 3 g fat (0 saturated); 6 mg cholesterol; 51 mg sodium
