Citrus Salsa Recipe
A quick and delicious way to make plain broiled fish extraordinary!

Ingredients
  • 3 medium oranges
  • 1 ruby red grapefruit
  • 1/4 C. chopped fresh cilantro
  • 3 chopped scallions
  • 2 tsp. white wine vinegar
  • 1 Tbs. olive oil
  • 1/4 tsp. chipotle powder or other hot red pepper, to taste
  • Salt and pepper

Directions
  1. Cut off peel and pith of fruit with sharp knife.
  2. Cut down between segments to release sections.
  3. Chop orange and grapefruit sections roughly.
  4. Add remaining ingredients and stir.
  5. Let sit for 10 minutes to macerate.
  6. Serve with broiled or grilled fish.
