Angelhair With Asparagus Recipe

Angelhair With Asparagus Recipe
Another good spring recipe with asparagus. I find myself making this with leftover Easter ham and fresh spring asparagus.

Ingredients
  • 1 pound asparagus, ends snapped off, spears, cut into 1" diagonals
  • 6 tablespoons butter
  • 1/2 cup ham, finely diced
  • 8 ounces mushrooms, sliced
  • 1/2 pound angel hair nests
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 2 cups half and half (the new fat-free half and half works really well)
  • 1 cup parmesan cheese, freshly grated

Directions
  1. Melt 2 T. butter in pan and saute the ham and mushrooms - set aside. Boil enough salted water to cook pasta and cook the asparagus in it for 4 minutes. Remove asparagus with slotted spoon and set aside. Add pasta to same water and cook until al dente. drain.
  2. In large saute pan, add 4 T. butter and the olive oil. Then add minced garlic and cook 1 minutes - do not brown or burn. Then add pasta and mix well with butter. Stir in cream and cheese. Cook until thickened. Add ham, mushroom and asparagus. Heat thoroughly and serve with extra parmesan for sprinkling.

Sounds good, however I think that I would use turkey ham or a vegetarian substitute called Wham by Loma Linda and Worthington foods:)
