How to make it

  • Preheat oven to 425
  • In a large frying pan warm 1 tbsp. oil on medium high
  • add onion and garlic
  • sautee' about 3 minutes or until onion is clear
  • sprinkle salt and pepper on chicken and add to pan
  • brown chicken, about 3 minutes each side
  • take chicken out and set aside
  • add the rest of the oil
  • add mushrooms and sautee' 3-4 minutes
  • turn up to high and add 1 cup chicken broth
  • add rice
  • bring to a boil and reduce to medium heat
  • simmer for 10 minutes
  • add remaining cup of broth and wine. Bring to a boil
  • place chicken in a medium sized casserole dish
  • pour rice mixture over chicken
  • cover and place in oven
  • bake for 20 minutes
  • when you remove the dish if it is too thin, put 1 tbs. flour in a measuring cup and add about 1/4 cup of the hot liquid. Stir well and then add to the casserole, put back in oven for about 5 min.
