Chicken And Rice My Way Recipe
I like rice, and chicken is low in fat so I'm always looking for new ways to make it. This is some stuff I put together tonight and we liked it, so I thought I'd share.

Ingredients
  • 2 tbs. olive oil
  • 1 section garlic, finely chopped
  • 1 small white onion
  • 1 cup mushrooms, chopped in large pieces, crimini's are my favorite
  • 1 cup rice
  • 2 cups chicken broth
  • 1 tbs. flour (if needed)
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/4 cup white wine : I used muscat
  • 4 chicken thighs minus skin

Directions
  1. Preheat oven to 425
  2. In a large frying pan warm 1 tbsp. oil on medium high
  3. add onion and garlic
  4. sautee' about 3 minutes or until onion is clear
  5. sprinkle salt and pepper on chicken and add to pan
  6. brown chicken, about 3 minutes each side
  7. take chicken out and set aside
  8. add the rest of the oil
  9. add mushrooms and sautee' 3-4 minutes
  10. turn up to high and add 1 cup chicken broth
  11. add rice
  12. bring to a boil and reduce to medium heat
  13. simmer for 10 minutes
  14. add remaining cup of broth and wine. Bring to a boil
  15. place chicken in a medium sized casserole dish
  16. pour rice mixture over chicken
  17. cover and place in oven
  18. bake for 20 minutes
  19. when you remove the dish if it is too thin, put 1 tbs. flour in a measuring cup and add about 1/4 cup of the hot liquid. Stir well and then add to the casserole, put back in oven for about 5 min.
