Chicken And Rice my way

- 2 tbs. olive oil shopping list
- 1 section garlic, finely chopped shopping list
- 1 small white onion shopping list
- 1 cup mushrooms, chopped in large pieces, crimini's are my favorite shopping list
- 1 cup rice shopping list
- 2 cups chicken broth shopping list
- 1 tbs. flour (if needed) shopping list
- 1 tsp. salt shopping list
- 1 tsp. pepper shopping list
- 1/4 cup white wine : I used muscat shopping list
- 4 chicken thighs minus skin shopping list
How to make it
- Preheat oven to 425
- In a large frying pan warm 1 tbsp. oil on medium high
- add onion and garlic
- sautee' about 3 minutes or until onion is clear
- sprinkle salt and pepper on chicken and add to pan
- brown chicken, about 3 minutes each side
- take chicken out and set aside
- add the rest of the oil
- add mushrooms and sautee' 3-4 minutes
- turn up to high and add 1 cup chicken broth
- add rice
- bring to a boil and reduce to medium heat
- simmer for 10 minutes
- add remaining cup of broth and wine. Bring to a boil
- place chicken in a medium sized casserole dish
- pour rice mixture over chicken
- cover and place in oven
- bake for 20 minutes
- when you remove the dish if it is too thin, put 1 tbs. flour in a measuring cup and add about 1/4 cup of the hot liquid. Stir well and then add to the casserole, put back in oven for about 5 min.
