Ingredients

How to make it

  • Spray the bottom of a large pot with cooking spray.
  • Over medium-high heat, brown the ground turkey thoroughly.
  • Remove meat to a colander and drain.
  • Spray the pot again, and saute onions and garlic until onions are soft.
  • Stir in 2 tablespoons chili powder, the cumin, basil and oregano, and cook until the spices' aromas are released.
  • Add wine or beer, and scrape around the pot to free up any bits that have stuck.
  • Return turkey to the pot and mix in. Add remaining ingredients (including the rest of the chili powder), adjusting seasonings to taste.
  • Bring to a boil, then simmer over low heat, stirring occasionally, about 1 hour - or until the chili is cooked down to your liking.
  • Let chili sit for ten minutes off the heat before serving.
  • (I think it tastes better if refrigerated, then re-heated the next day.)
  • NOTE: You can make this chili even richer by adding leftover cooked turkey or chicken. Just throw the meat, bone and all, into the pot with everything else, and simmer as usual. Remove the bones from the pot once the meat falls off.
