Pecan Banana Bread French Toast

- 2 cups all purpose flour sifted shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup unsalted butter at room temperature shopping list
- 1 cup granulated sugar shopping list
- 2 eggs shopping list
- 1 cup ripe bananas mashed shopping list
- 1 teaspoon fresh lemon juice shopping list
- 1/3 cup milk shopping list
- 1/2 cup pecans, chopped shopping list
- 4 large eggs shopping list
- 1/4 cup whipping cream shopping list
- 2 tablespoons brown sugar shopping list
- 1 teaspoon vanilla extract shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 3 tablespoons butter shopping list
How to make it
- Preheat oven to 350 then generously butter a loaf pan.
- Sift first 3 ingredients into a small bowl.
- Using an electric mixer cream butter in a large bowl until light then gradually beat in sugar.
- Beat in eggs one at a time then add mashed bananas and lemon juice and beat until well blended.
- Mix in dry ingredients alternately with milk beginning and ending with dry ingredients.
- Mix in pecans then pour batter into prepared pan.
- Bake until toothpick inserted in center comes out clean about 1 hour 20 minutes.
- Cool in pan on rack for 10 minutes then turn out onto rack and cool completely.
- Cut bread into thick slices.
- Preheat oven to low.
- Whisk eggs, cream, sugar, vanilla, and spices in a large bowl until blended.
- Melt 1 tablespoons butter in a heavy large skillet over medium heat.
- Place some bread in the batter and turn to coat thoroughly.
- Add bread to skillet then cook until golden brown about 3 minutes per side.
- Transfer toast to a cookie sheet then place in oven to keep warm.
- Repeat with remaining bread slices and batter in batches adding more butter to skillet as necessary.
- Serve toast with maple syrup.
