How to make it

  • Preheat oven to 180 Celsius.
  • Heat the oil in a casserole and fry the onion, garlic and any fresh ingredients until golden (about 5 mins)
  • Stir in the rice until coated in oil.
  • Add the stock and any tinned ingredients.
  • Bring to the boil.
  • Season and then simmer until most of the water has been absorbed (about 5 mins)
  • Scatter over the cheese.
  • Bake in the oven for 30 mins.
