Cheesy Rice

- 2 tbsp oil shopping list
- 1 onion, finely chopped shopping list
- 1 garlic clove, chopped shopping list
- whatever you have in your cupboards: small can chopped tomatoes, sweetcorn, kidney beans etc. shopping list
- whatever you have in your fridge: chopped peppers, mushrooms etc. shopping list
- anything else you like! shopping list
- 300g rice shopping list
- 1 litre vegetable stock shopping list
- 100g cubed cheddar or edam or whatever cheese you have shopping list
How to make it
- Preheat oven to 180 Celsius.
- Heat the oil in a casserole and fry the onion, garlic and any fresh ingredients until golden (about 5 mins)
- Stir in the rice until coated in oil.
- Add the stock and any tinned ingredients.
- Bring to the boil.
- Season and then simmer until most of the water has been absorbed (about 5 mins)
- Scatter over the cheese.
- Bake in the oven for 30 mins.
