Cheesy Rice Recipe
This is a really easy and versatile dish, great for when you're running low on provisions.

Ingredients
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 1 garlic clove, chopped
  • whatever you have in your cupboards: small can chopped tomatoes, sweetcorn, kidney beans etc.
  • whatever you have in your fridge: chopped peppers, mushrooms etc.
  • anything else you like!
  • 300g rice
  • 1 litre vegetable stock
  • 100g cubed cheddar or edam or whatever cheese you have

Directions
  1. Preheat oven to 180 Celsius.
  2. Heat the oil in a casserole and fry the onion, garlic and any fresh ingredients until golden (about 5 mins)
  3. Stir in the rice until coated in oil.
  4. Add the stock and any tinned ingredients.
  5. Bring to the boil.
  6. Season and then simmer until most of the water has been absorbed (about 5 mins)
  7. Scatter over the cheese.
  8. Bake in the oven for 30 mins.
