Millet Cashew Patties Recipe

Ingredients
  • 1 ½ c. cooked millet
  • 1 c. rolled oats
  • ½ c. cashews
  • 1 c. water
  • 1 med. onion (chopped fine)
  • ½ tsp freshly minced garlic
  • 2 T soy sauce

Directions
  1. The flavor of millet is enhanced by lightly roasting the grains in a dry pan before cooking; stir constantly for approximately three minutes or until a mild, nutty aroma is detected.
  2. Cook millet like rice, using 1 cup millet to 3 cups water or stock, for 30 minutes. Boil at first, then reduce to simmer and don’t peek.
  3. Blend cashews and water.
  4. Pour over other ingredients.
  5. Mix well and form into patties.
  6. Bake 15 to 20 minutes at 325F.
  7. Good in sandwiches or as veggie burgers in buns.
