Florida Lemon Braised Artichokes Recipe
From the Naples Daily Times..from Frank Whittaker, exec chef at OLIO, Naples Bay Resort.This topping can be used on pasta dishes, salads, to top pizzas or just by itself as an appetizer. You can add Parmesan cheese to the finished dish if desired.

  • Ingredients
  • 10 artichoke hearts
  • 1 cup fresh lemon juice
  • 2 tablespoons kosher salt
  • 1 tablespoon fresh cracked black pepper
  • 1 bay leaf
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon garlic, chopped
  • 2 ounces white wine
  • 3 cups extra virgin olive oil

Directions
  1. Preheat the oven at 350 degrees.
  2. Toss all the ingredients together and place in a two-inch deep baking pan.
  3. Cover the pan with aluminum foil and bake for 20 minutes or until the artichokes are soft.
  4. Let the artichokes cool before adding to other dishes.
