Champignons a La Monegasque

- 750 g button mushroom shopping list
- 8 anchovy fillet shopping list
- 5 tablespoons olive oil shopping list
- 1/2 teaspoon mint sprig shopping list
- 1/3 cup lemon juice shopping list
- 3 tablespoons parsley sprig shopping list
How to make it
- 1Trim stalks of mushrooms and if small leave whole, otherwise cut in half or quarters according to size.
- 2Heat oil in heavy pan and gently cook the mushrooms.
- 3after 5 mins season with pepper and add the anchovy fillets, mint and lemon juice.
- 4cook until liquid is reduced.
- 5sprinkle with parsley and serve at once.
