Celebration Chicken Recipe
This is my version of a recipe called "Anniversary Chicken" from Allrecipes.com. I made it at Easter and my guests loved it. It's not a low fat dish but when you're celebrating,who cares. Hope you enjoy it.

Ingredients
  • 8-10 boneless skinless chicken thighs
  • 1/2 cup teriyaki sauce
  • 2 cloves garlic-minced
  • 1/2 cup ranch salad dressing-or to taste
  • 1 medium sweet yellow onion-thinly sliced
  • 1 small can mushroom pieces-drained
  • 4-5 slices crisp cooked bacon-chopped
  • 1 1/2 cups sharp cheddar cheese-or to taste

Directions
  1. Place chicken in a ungreased 9" x 13" baking dish.
  2. Combine teriyaki sauce and minced garlic and pour over chicken. Make sure chicken is coated on both sides. Marinade for 1 hour.
  3. You may pour marinade off if desired(I don't).
  4. Brush ranch dressing onto each piece of chicken.
  5. Place onion slices and mushrooms over chicken.
  6. Cover tightly with foil and bake at 350 degrees for 30 minutes or until chicken is cooked through.
  7. Remove foil and top with cheddar cheese and chopped bacon.
  8. Bake uncovered for an additional 10 minutes or until cheese is melted.
  9. Serve with rice or mashed potatoes.
