Company Chicken

- 3 Pounds of chicken ,cut up into serving pieces shopping list
- 1/3 Cup flour shopping list
- 1 teaspoon allspice shopping list
- 1/2 teaspoon poultry seasoning shopping list
- 1/2 Cup peanut oil shopping list
- 1 Cup scallions,chopped shopping list
- 1/3 Pound mushrooms, sliced shopping list
- 1 (14oz) Can crushed pineapple,drained,reserve juices shopping list
- 1/2 Cup apricot nectar shopping list
- 1&1/2 Cups chicken broth shopping list
- 1 Tablespoon soy sauce shopping list
- 2&3/4 Cups chopped pecans (or) sliced almonds(toasted a bit to bring out the flavor) shopping list
How to make it
- Combine flour,allspice,and poultry seasoning in a bag.
- Shake chicken pieced in the flour mixture
- --Place chicken pieces in the refrigerator to set coating before browning.--
- Brown chicken pieced in the hot oil
- Set chicken aside.
- Drain fat
- Return 1/4 cup fat in skillet and saute onions,mushrooms,
- Add browned chicken,juice from the drained pineapple,apricot nectar,broth and soy sauce
- Cover and simmer 30 minutes or until done.
- Add pineapple,and nuts
- Cook 15 minutes
- Serve on Toasted Coconut Rice
- Toasted Coconut Rice:
- Combine 4 Cups cooked rice with 1/2 cup melted butter and 1 Cup toasted coconut.

Sounds wonderful! I have never tried allspice in my chicken but I will try this one.
