How to make it

  • Combine flour,allspice,and poultry seasoning in a bag.
  • Shake chicken pieced in the flour mixture
  • --Place chicken pieces in the refrigerator to set coating before browning.--
  • Brown chicken pieced in the hot oil
  • Set chicken aside.
  • Drain fat
  • Return 1/4 cup fat in skillet and saute onions,mushrooms,
  • Add browned chicken,juice from the drained pineapple,apricot nectar,broth and soy sauce
  • Cover and simmer 30 minutes or until done.
  • Add pineapple,and nuts
  • Cook 15 minutes
  • Serve on Toasted Coconut Rice
  • Toasted Coconut Rice:
  • Combine 4 Cups cooked rice with 1/2 cup melted butter and 1 Cup toasted coconut.
