Ingredients
  • 3 Pounds of Chicken ,cut up into serving pieces
  • 1/3 Cup Flour
  • 1 teaspoon Allspice
  • 1/2 teaspoon Poultry Seasoning
  • 1/2 Cup Peanut Oil
  • 1 Cup Scallions,chopped
  • 1/3 Pound Mushrooms, sliced
  • 1 (14oz) Can Crushed pineapple,drained,reserve juices
  • 1/2 Cup Apricot Nectar
  • 1&1/2 Cups Chicken Broth
  • 1 Tablespoon Soy Sauce
  • 2&3/4 Cups chopped Pecans (or) sliced Almonds(Toasted a bit to bring out the flavor)

Directions
  1. Combine flour,allspice,and poultry seasoning in a bag.
  2. Shake chicken pieced in the flour mixture
  3. --Place chicken pieces in the refrigerator to set coating before browning.--
  4. Brown chicken pieced in the hot oil
  5. Set chicken aside.
  6. Drain fat
  7. Return 1/4 cup fat in skillet and saute onions,mushrooms,
  8. Add browned chicken,juice from the drained pineapple,apricot nectar,broth and soy sauce
  9. Cover and simmer 30 minutes or until done.
  10. Add pineapple,and nuts
  11. Cook 15 minutes
  12. Serve on Toasted Coconut Rice
  13. Toasted Coconut Rice:
  14. Combine 4 Cups cooked rice with 1/2 cup melted butter and 1 Cup toasted coconut.

Sounds wonderful! I have never tried allspice in my chicken but I will try this one.
