Bacon Broccoli Cheddar Souffle

- 1/2 a bunch of broccoli, finely chopped and steamed or boiled then drained shopping list
- 1/4 lb diced bacon fried until crispy and drained of fat shopping list
- butter for greasing shopping list
- 3/4 cup breadcrumbs shopping list
- 1/4 cup butter shopping list
- 1/4 cup all purpose flour shopping list
- 2 1/4 cup milk shopping list
- pinch of nutmeg shopping list
- 1/2 tsp hot sauce shopping list
- salt and pepper shopping list
- 1/2 cup shredded white cheddar shopping list
- 3 eggs, separated shopping list
How to make it
- Preheat oven to 400. Grease a soufflé dish with butter and sprinkle with bread crumbs and turn to coat, tipping out excess.
- For Béchame Saucel: Melt the butter in a pan over medium heat. Whisk in the flour. Pour in the milk, whisking constantly until it starts to boil. Season with nutmeg, hot sauce, salt and pepper. Simmer sauce for 10-20 minutes, stirring occasionally for 10-20 minutes, until thickened and smooth. Remove sauce from heat.
- Preheat oven to 400. Grease a soufflé dish with butter and sprinkle with bread crumbs and turn to coat, tipping out excess.
- Stir shredded cheddar into béchamel sauce until melted. Beat in egg yolks, one at a time. Stiffly beat the egg whites and fold in with broccoli and bacon.
- Spoon mixture into prepared dish and bake for 20 minutes. Lower the temperature to 350 and bake for 5 minutes more. Serve immediately.
