Bacon Broccoli Cheddar Souffle Recipe
I always thought soufflés were sort of pretentious having never made one until I cooked this up with some leftover broccoli and bacon in my otherwise empty fridge.It was way easier and tastier than I imagined and impressive!

Ingredients
  • 1/2 a bunch of broccoli, finely chopped and steamed or boiled then drained
  • 1/4 lb diced bacon fried until crispy and drained of fat
  • butter for greasing
  • 3/4 cup breadcrumbs
  • 1/4 cup butter
  • 1/4 cup all purpose flour
  • 2 1/4 cup milk
  • pinch of nutmeg
  • 1/2 tsp hot sauce
  • salt and pepper
  • 1/2 cup shredded white cheddar
  • 3 eggs, separated

Directions
  1. Preheat oven to 400. Grease a soufflé dish with butter and sprinkle with bread crumbs and turn to coat, tipping out excess.
  2. For Béchame Saucel: Melt the butter in a pan over medium heat. Whisk in the flour. Pour in the milk, whisking constantly until it starts to boil. Season with nutmeg, hot sauce, salt and pepper. Simmer sauce for 10-20 minutes, stirring occasionally for 10-20 minutes, until thickened and smooth. Remove sauce from heat.
  3. Preheat oven to 400. Grease a soufflé dish with butter and sprinkle with bread crumbs and turn to coat, tipping out excess.
  4. Stir shredded cheddar into béchamel sauce until melted. Beat in egg yolks, one at a time. Stiffly beat the egg whites and fold in with broccoli and bacon.
  5. Spoon mixture into prepared dish and bake for 20 minutes. Lower the temperature to 350 and bake for 5 minutes more. Serve immediately.
