How to make it

  • Singe chicken over low heat turning slowly.
  • Wash outside of chicken then pat dry.
  • Wipe inside with damp cloth.
  • Halve chicken lengthwise then rub with salt and pepper.
  • Place skin side up on rack in roasting pan then brush with salad oil.
  • Bake at 325 for 1 hour 45 minutes brushing twice with cooking oil.
  • Brown onions in butter then add rice, poultry seasoning and parsley.
  • Season to taste with salt and pepper then arrange on platter.
  • Quarter chicken and place on rice.
