Ingredients
  • 2-1/2 pound chicken
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Salad oil
  • 1/4 cup chopped white onion
  • 3 tablespoons butter
  • 4 cups hot cooked rice
  • 1/2 teaspoon poultry seasoning
  • 1 tablespoon chopped parsley
  • Watercress

Directions
  1. Singe chicken over low heat turning slowly.
  2. Wash outside of chicken then pat dry.
  3. Wipe inside with damp cloth.
  4. Halve chicken lengthwise then rub with salt and pepper.
  5. Place skin side up on rack in roasting pan then brush with salad oil.
  6. Bake at 325 for 1 hour 45 minutes brushing twice with cooking oil.
  7. Brown onions in butter then add rice, poultry seasoning and parsley.
  8. Season to taste with salt and pepper then arrange on platter.
  9. Quarter chicken and place on rice.
