Baked Chicken With Herb Buttered Rice

- 2-1/2 pound chicken shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- salad oil shopping list
- 1/4 cup chopped white onion shopping list
- 3 tablespoons butter shopping list
- 4 cups hot cooked rice shopping list
- 1/2 teaspoon poultry seasoning shopping list
- 1 tablespoon chopped parsley shopping list
- watercress shopping list
How to make it
- Singe chicken over low heat turning slowly.
- Wash outside of chicken then pat dry.
- Wipe inside with damp cloth.
- Halve chicken lengthwise then rub with salt and pepper.
- Place skin side up on rack in roasting pan then brush with salad oil.
- Bake at 325 for 1 hour 45 minutes brushing twice with cooking oil.
- Brown onions in butter then add rice, poultry seasoning and parsley.
- Season to taste with salt and pepper then arrange on platter.
- Quarter chicken and place on rice.
